Indian Creek friends, many of you have tasted balimbing. Our cafeteria service has served balimbing the last few times they've done the A-Z Salad Bar.
To refresh your memory, balimbing has a soft inside. It is sweet, but not awfully sweet. The skin is tough and should not be eaten. When Sodexo has served balimbing, they have sliced the fruit so one can see the "star" that it is.
